Pepperoni and cheese omelette cups! 


I’ve seen omelette cups all over Pinterest. I have been wanting to try and make some for a while I just never got to it. This morning I finally did it! These are 1.2g carbs for four. 

Here’s what you need

-a muffin pan


– favorite type of cheese. I used cheddar Jack. 

– 6 eggs

-3 tspb of butter 

First you need to pre-heat your oven to 375.

Next crack your eggs into a bowl and add salt and pepper. Then mix them until they are all a light yellow color. Then be sure to spray your muffin pan with non stick spray or else they will stick and break apart. 

Next pour your eggs as evenly as possible into 8 slots in your muffin pan. Be sure not to fill it to the top because when you add your pepperoni and cheese it will spill over. 

Next you add two pepperonis into each slot. After the pepperonis sprinkle cheese evenly over each slot. Then cut your butter into even piece and put one piece on each. You can honestly add any ingredients you like. Pepperoni is all I had on hand at the time. You can get as creative as you want with these! Endless combinations! 

Lastly put it in the oven. My oven at 375 took 12 minutes to cook fully. Your eggs should have risen double in size from when you put them in!

Bacon and egg fat bombs! 


Fat bombs are a new concept to me since I just recently started doing macros. I didn’t realize that I was getting so little fat everyday. A facebook group I’m in suggested trying fat bombs. I think each week I’m going to try and make different kinds of fat bombs and post them here. First of all none of these are my recipes. I will try to post them sources where I found them. 

Now, Bacon and egg fat bombs! The link to what you need and directions are below. These are pretty easy. I have never made fat bombs before and I was able to make them! I doubled the recipe to make 12 fat bombs. They have .2g carbs,  5g protein, and 18.4g fat for one! The only problem I had was I bought thick cut bacon so it didn’t get that crispy. Next time I make them I’ll buy regular bacon and it should work  a lot better. Here’s what mine look like! They turned out a little more wet but I’m hoping they harden a little bit in the fridge!

Pizza chicken


This recipe is super simple and one of my husbands favorites. There are only three ingredients which makes it a cheap low carb recipe.

All you need is:
-Chicken breasts
-Mozzarella cheese
-Your favorite pizza toppings.

Pre-heat your oven to 425°.
Once your oven is pre-heated put salt and pepper on your chicken and bake it for 25 minutes.

Once your chicken is baked put a layer of mozzarella cheese on top then your favorite pizza toppings. Then put it back in the oven for 5 minutes to let it all melt together.

Then it’s done! Below are pictures of pepperoni pizza chicken I made for my husband last night. It doesn’t look the best but it was good!


“Potato” salad


I absolutely love potato salad but one of thing food you can’t have on a low carb diet is potatoes. So me and my sister found this recipe on Pinterest and decided to make it. It is a lot easier than I thought I would be! Also pretty good! Picture at the bottom!

What you will need:

-1 head of cauliflower
-3 hard boiled eggs
-3 tbsp of mayo
-3 tbsp of sour cream
-1 tbsp of mustard
-1 tsp salt

First you will need to chop the cauliflower into bite size pieces. Then boil your cauliflower until fork tender then drain the water out.

Next you will need to hard boil your eggs. Once hard boiled chop into small bite size pieces.

Then mix the cauliflower, eggs, and the rest of the ingredients into a bowl and let sit in the fridge for at least 30 minutes before serving.


Low carb Philly cheese steak


This is another super simple and delicious recipe. I have seen this recipe multiple places and I have simplified it to the minimum ingredients and made sure it still tasted good!

What you will need:
-green bell pepper
-roast beef (I buy pre-cooked from the deli)
-provolone cheese

Preheat your oven to 410°

First you will need to cut your bell pepper in half and take out the seeds. Then place cut side down on a greased baking sheet. Place in the oven for 10 minutes or until the pepper is soft but still holds it’s shape.

Next, dice your onion and start the brown in a skillet. Once your onions are almost done put you roast beef in to heat it up.

After you take your bell peppers out and your roast beef is heated up you can put it together. Place your bell pepper on a plate and put the roast beef and onions inside the bell pepper then put your provolone cheese on top.

I have this for dinner one a week. It is probably the quickest recipe I have ever posted. Simple, quick and delicious is the best kind of dinner.

Low carbs chicken cordon blue!


I made this for the first time and it was so good! This is not my recipe but I made it a little differently than what I saw on Pinterest.

What you will need:

-raw chicken breast ( I bought the breast tenders, they are easier to shred)
– Swiss cheese
-Alfredo sauce
-pork rinds

First you need to cook your chicken. 425° for 25 minutes. Once your chicken is cooked shred it.

Next put your shredded chicken in a even layer in the bottom of a greased pan. Next pour Alfredo sauce on top of the chicken. Then put your ham on top of that. Next put your Swiss cheese on top. Lastly, crush up pork rinds until they look like bread crumbs. Then sprinkle them on top.

After you layer your cordon blue, put it in the oven at 425° for 10 minutes  until the cheese is melted or the pork rinds are crispy.

Super easy to make and it’s delicious!


Low carb chicken tenders!


This is super simple to make!  Me and my husband loves chicken tenders. We used to buy frozen chicken tenders and heat them up in the oven but they had a ton of carbs. These have 0g carbs!

The only things you will need are:

Chicken tenders or slice chicken breast

A bag of pork rinds any flavor

2 eggs

A plastic storage bag

First you need to preheat your oven to 400°.

Next put your pork rinds in the plastic storage bag. Squeeze all the air out and crush the pork rinds until they are small enough to coat the chicken. Then pour it on to a plate.

Then crack two eggs into a bowl, add salt and pepper. Then beat the eggs.

Now take your chicken tenders dip them into the egg, then coat them in the pork rinds. 

Now put then on a baking sheet with non stick cooking spray. Bake them in the oven for 20 minutes.

Then enjoy!  My family eats these every week. We’ve tried a lot of different flavors of pork rinds and they are all delicious. I personally think it tastes better then bread crumbs.
